My name is Brooke, so I understand the first part, but what does the add on mean? They pronounce it as brook-el-lito.

Brookelito means little Brooke. It’s a nickname of affection, or liking of a friendly person.

It’s a pet name, just like in america we’d say Frank, Frankie etc., this one in particular means little brooke.

It´s just your name with a diminitive ending. In Spanish we use diminutive ending to make terms of endearment.
    Literally: Little dear Brook
